There is such a thing as post-graduation discipline, namely, revocation of a degree. Given that she present a work as her own full creation for course credit, she's (arguably) defrauded the college.
You'll need to find the professor who accepted it as coursework and get them on your side.
That is ridiculously annoying.
It's one thing when they contact you, get permission, and give full credit...
I've had that happen on DA and was a bit flattered.
But this is just blatant theft. They didn't even try to change it much either!

This person actually added my Rapunzel picture to her favorites this past February, THEN in April, posted their own version. I was just checking the people who'd favored my work. HOPEFULLY there aren't any other versions out there!
You should take her version, bastardize it, and sign it as her/him. Then post it all kinds of places she/he would likely see it. :/ (Just to be funny...)
Actually, on second thought, that might not work either.... (and would take a lot of time for some weird inside joke).
